Turns out I’m going home tomorrow, a couple of days earlier than I expected. So this is the last dinner I’m making for my folks for a little while. It’s roasted brussel sprouts (just tossed with salt, pepper, and olive oil and tossed in the oven for half an hour), garlic bread, and lasagna. I didn’t have a recipe on me so I just made up the lasagna, and it came out a little saucy but still delicious. Of course, the fresh basil from the garden doesn’t hurt.

dinner with lemonade!

Vegan Mofo 2009!

For dinner tonight, I made:

  • scalloped redskin potatoes (veganized from my parents’ old-school Joy of Cooking),
  • green beans with almonds (improv), and
  • the chickpea cutlets from Veganomicon.

The chickpea cutlets! It was my first time making them. Life gave me moldy lemons, so I omitted the lemon zest. We didn’t have paprika (Hungarian or any other nationality) so I used chipotle chili pepper, and then I added liquid smoke, nooch, and some salt and pepper and baked them. They were tasty, kind of like chicken-fried chicken, and I think next time I’ll make them in dino shapes.

Gross sidenote #1: I cut the side of my hand somehow on the can of chickpeas. By somehow I mean, I used the can openers to slice open the lid but they refused to slice two segments approximately 45* apart from each other, so I tried to prise it all the way open with a fork, and my hand slipped and the lid cut the side of my hand. It’s still bleeding profusely.

Gross sidenote #2: the raw stuff of chicken nuggets looks nothing like chicken but very much like strawberry soft serve.

pancake muffins

homestyle potatoes, tofu bacon cubes, & pancake muffins

My dad got out of the hospital yesterday, and I figured, the first thing I would want after getting out of the hospital would be some real food. So I made homestyle potatoes with fresh basil from the neighbor’s garden, tofu bacon cubes, avocado slices, and strawberry-chocolate chip pancake muffins.

One of my roommates came up with the idea of baking pancakes in muffin tins instead of frying them, and I do it all the time now, especially if I’m making other fried things for breakfast. It uses less oil and takes less attention. Plus they’re adorable, and you know, vegans only eat cute things. I go through dozens of kittens a week.
